How often should a grease trap be emptied?
For a restaurant, every 1 to 3 months depending on the size of the trap and how busy the kitchen is. A saturated trap lets grease through into the network, where it sets and causes blockages that are hard to shift.
Is emptying a legal requirement?
A food business must have a working grease trap and be able to show it is maintained. We issue a waste transfer note with every visit, which serves as proof in an inspection.
Can you work outside service hours?
Yes. In Alpes-Maritimes we schedule emptying early in the morning, after service or during closing days, so trading is never interrupted.
